Sometimes, you just need a little comfort food.
I don’t know about you – but apple crumble and apple pie are one of those warm, gooey, delicious treats that I could pretty much eat any time. And since I’m getting a bit sick on Halloween candy (zero willpower + 3 bags of Halloween candy that the kids have forgotten about = an ill Mumsie) – I needed something a tad healthier to satisfy my cravings.
My friend Dee sent me this idea for Baked Oatmeal Apples and not only are they delicious – they’re a versatile treat – good for breakfast, lunch, snacks, or even when you’re so hungry because you’ve been running around like a madwoman all day and now you just need to cram something in your gullet…
Plus – they’re ridiculously easy to make. Here’s what you need:
Ingredients
1 cup cooked oatmeal
1/4 cup raisins
A pinch of cinnamon
Several apples (however many you’d like to make)
Instructions
Mix together your cooked oatmeal, raisins and cinnamon.
Core your apples and place them on a cookie sheet.
Pack apples with oatmeal mixture.
Bake at 350 F for about 30 minutes. You’ll want to keep an eye on them though, because if they’re in the oven too long, the apples will turn to sauce.
Serve with a little drizzle of maple syrup for a great breakfast or a lunch box snack. Or put a dollop of whip cream for a healthier dessert option.
Tastes like apple crumble without all the sugar. Perfect!
